Perfect when you have old bread left over

This is an ideal soup to make when you have little left in the house and don’t want to go shopping. All you really need are tomatoes (from a can) and old bread. A genuine meal from the pantry!

The bread in the soup makes the soup filling and is a good reason not to throw away old bread. When the bread is a bit older it absorbs the moisture better. Works even better than when you use fresh bread.

Easy and tasty

The base of the soup consists of finely chopped carrot, onion, garlic and celery. Then you can add as many different kinds of tomatoes as you like. Vine tomatoes, beef tomatoes, cherry tomatoes. We use cherry tomatoes from a can. Make sure that you crack open all the tomatoes, otherwise the inside of the tomato will be scorching hot when you eat the soup.

Authentic Italian

Of course, served with fresh basil for that real Italian feeling. Buon appetito!
